I don’t normally enjoy lasagna very much as it gives me bloated feeling after I ate them. It can be very filling if you know what I mean. But, not this one. I think the eggplant is helping to get rid off the over full feeling.

Ingredients:
375gr fresh pasta lasagna (you may not use all of it)
1kg beef mince (I prefer 500gr of pork mince and 500gr of beef mince)
1 kg eggplant , cut the end bits off and slice thinly lengthways
1 onion, minced
3 garlic clove, crushed
800gr tin chopped tomatoes
8 hard boiled egg, pilled and halve
1/2 tsp dried oregano
Olive oil
Salt and pepper to taste
A cup of mixed cheese (grated cheddar cheese, parmesan and mozzarella)

Step by Step Instructions:
-Heat the oven 160 Degree Celsius fan forced or 180 normal.

-Place the sliced eggplant in a baking dish, drizzle with olive oil, cook in the oven for about 25 minutes or until the eggplant softens. Take out from the oven.

-While you are waiting for the eggplant to cook, heat up the olive oil in a pan or pot.
-Sautee the onion and garlic until softened.

-Add the mince beef/pork, stir constantly until half cooked.
-Add the chopped tomatoes, salt, pepper and oregano. Lower the heat, stir occasionally until the meats cooked. Turn off the heat.

-In a baking dish, place the lasagna sheet to cover bottom part of the baking dish evenly. And then do the same thing with the eggplant.

-Add half of the meat mixture. Spread evenly.

-Add more eggplant and then  lasagna sheet on top.

-Place the boiled egg evenly as if each portion get 2 slice of egg.

-Pour the rest of the meat mixture. Spread evenly.

-Sprinkle mixed cheese evenly on top.
-Cover the lasagna with aluminium foil (make sure the aluminium doesn’t touch the cheese). Cook the lasagna in the oven for about 25 minutes.
-Take the lasagna out from the oven, take off the aluminium foil. Put it back in the oven, bake for another 10 minutes or until the cheese little bit golden brown. Turn off the oven.
