Savoury Risotto Recipe

- 400gr Arborio rice (risotto)
- 1.5 cup diced carrot
- 5 garlic clove, minced
- 1 big onion, diced
- 1 litre chicken stock
- ¼ cup white wine
- 1 cup grated parmesan cheese
- 2 tbs cooking oil
- ½ lemon
- Pre-heat the oven 180 degrees Celsius fan forced.
- Sautee onion and garlic until soft.
- In an oven-safe lidded casserole, add sautéed carrot onion and garlic, chicken stock, white wine and rice. Mix well. Cover with aluminium foil.
- Place in the oven and cook for 45 minutes.
- Remove from the oven, while it's hot, add parmesan cheese on top. Drizzle with juice from squeeze lemon.
- Serve risotto with Butterflied Apricot Chicken, Osso Bucco, or any other Italian dish.
