Indonesian Lamb Curry Recipe

Ingredients:
Ingredients 1:
  • 1,5 kg lamb meat/choose the tender part, cut into pieces
  • 3 tbs olive oil
  • 400ml coconut milk
  • 3-4 cups of water
  • Salt
  • Fried shallot/French onion-you can buy it from Asian groceries store
  • Sweet soy sauce
Ingredients 2:
  • 1 brown onion, slice thinly
  • 10 garlic clove, slice thinly
  • ½ - 1 tsp turmeric powder
  • 2 tsp dried chilli flakes
  • 1 tsp coriander powder
  • ½ tsp cinnamon powder/1 small stick
  • ½ tsp nutmeg powder
  • 2 lemon grass, crushed
  • 6 bay leaf
  • 4 cm long galangal, crushed-you can skip this -ingredient since little bit hard to find
Cooking Instructions:
  1. Sautee onion and garlic until soft, add all the rest of ingredients no. 2.
  2. Add the lamb, cook until it’s brown.
  3. Add the coconut milk, stir occasionally, cook until lamb meat soft.
  4. Add salt if needs to. Taste.
  5. Serve with rice, springkle with fried shallot and a dash of sweet soy sauce.
