Ingredients:
  • ½ medium onion, diced
  • 1 medium carrot, diced
  • 5 spring onion leaves, sliced
  • 5 eggs
  • 2 table spoon olive oil
  • Salt and pepper
  • ½ avocado, sliced
  • 7 cherry tomatoes, cut into half
Cooking Instructions:
  1. Heat the oil then saute the onion and carrot until they're look shinny and smell good.
  2. Mix the eggs together with spring onion until the color little bit pale.
  3. Put half egg mix into the pan, once the egg nearly cooked, put half of cooked onion and carrot on top of it-half side. Put salt and pepper (or you can skip it) And the same thing with the second half as it's for 2 portion.
  4. Once the eggs cooked, flip the other half together to look like in the picture.
  5. Put the omelet on a plate, add avocado and tomatoes.
