There are lots of things I like about frittatas, one of them is that I can add whatever ingredients I want and the measurement is very flexible. Most of the time I use left overs, basically using whatever I can find in the fridge. I’m happy to throw cauliflower, broccoli, salmon or other fish, ham, BBQ chicken, cheese, pasta, anything. Not to mention that vegetarian frittata is delicious too 🙂

Frittata often used in kids party menu too, cooking using muffin cups to make it look pretty and appealing for the kids. In this case, I think Frittata is a healthier option than chips or sausage rolls. Well, shall we begin ?

Ingredients:
500gr boiled/cooked potatoes (room temperature), diced roughly 1-2cm thick
300gr ham, diced (you can use BBQ chicken, boiled chicken, fish, etc)
1 tbsp olive oil
1 medium brown onion, diced
½ fresh milk
2 tbsp fresh thick cream
6 big size egg (8 medium size)
Salt and pepper for taste

Method:
-Turn on the oven 180°C fan forced or 200°C normal.

-Place non stick baking paper in a baking dish (diameter 23cm or big enough for the frittata mixture).

-Sautee the onion until soften and beautifully fragrant.

-Using whisk, mix the egg together with cream, milk, salt and pepper until well mixed.

-Add ham, potatoes and sautéed onion, mix together using spatula or big spoon.

-Pour the frittata mixture into the baking dish, cook for about 30 – 45 minutes or until the top golden brown. Use bamboo stick to check if frittata is cooked through.

-Move fritata into a wooden chopping board or serving plate to make it easier to cut and serve.

Best to serve this yummy frittata with fresh green salad. This time I made Pomegranate with greens and sliced apple salad.
