Remind me when I was younger, I think I was early teen when my mum got sick and she’s only wanted to eat soup. Mum asked me to make her basil leaf and corn soup, no meat. Just basil leafs, corn, water, salt and “kencur” – not sure what it called in english but it’s from ginger family but a lot smaller and has different aroma. Very refreshing, no wonder why mum wanted this soup when she’s not feeling well. I haven’t found this herb here in Australia, I might didn’t look hard enough. I found this soup taste pretty similar as the basil aroma is very dominant. If you love basil, this soup is definitely worth to try 🙂
Beef and Basil Soup Recipe

Serves: 4
Ingredients:
- 500gr beef fillet, cut into strips
- 30 gr of basil leafs
- 1x small zucchini (200gr), sliced
- 1 stalk of lemon grass, crushed
- 4 cups of beef stock
- 2 cm ginger, crushed
- 6 yellow cherry tomatoes (or any small tomatoes), halve
- 400 gr can sweet corn kernel drained
- 3 to 4 tbs mushroom soy sauce
Cooking Instructions:
- Add the beef stock in a pot, bring to boil.
- Add lemon grass and ginger, continue cooking for about 10 minutes.
- Add beef, cook in a low heat until beef tender.
- Add zucchini and corn, cook for further few minutes.
- Turn the heat off, add mushroom soy sauce and tomatoes, stir.
- Serve the beef soup with basil leaf.
