Chicken with Veggies and Shiitake Mushroom Recipe

Ingredients:
  • 750gr boneless skinless chicken thigh, cut into bite-sized pieces
  • 2 bok choy, quartered lengthways
  • 1 cup shiitake dried mushroom, soak in a hot water, drain
  • 1 big spring onion, cut into 1cm length
  • 2 big French onion/shallot (6 asian shallot), slice thinly
  • 3 tbs soy sauce
  • 1 tbs brown sugar
  • 2 tbs vegetable oil (I use rice brand oil)
  • 1 tsp sesame oil
  • 1 tsp black peppercorn
Cooking Instructions:
  1. Heat oil in a pan, brown the chicken over high heat for about 3 minutes.
  2. Add shallot and spring onion, stir for about 1 minute.
  3. Add mushroom, soy sauce, brown sugar, sesame oil and pepper corn, stir until chicken cooked.
  4. Add bok choy, stir for about 1 minute. Turn the fire off.
  5. Serve chicken with rice.
