Chicken with Veggies and Shiitake Mushroom Recipe

- 750gr boneless skinless chicken thigh, cut into bite-sized pieces
- 2 bok choy, quartered lengthways
- 1 cup shiitake dried mushroom, soak in a hot water, drain
- 1 big spring onion, cut into 1cm length
- 2 big French onion/shallot (6 asian shallot), slice thinly
- 3 tbs soy sauce
- 1 tbs brown sugar
- 2 tbs vegetable oil (I use rice brand oil)
- 1 tsp sesame oil
- 1 tsp black peppercorn
- Heat oil in a pan, brown the chicken over high heat for about 3 minutes.
- Add shallot and spring onion, stir for about 1 minute.
- Add mushroom, soy sauce, brown sugar, sesame oil and pepper corn, stir until chicken cooked.
- Add bok choy, stir for about 1 minute. Turn the fire off.
- Serve chicken with rice.
