2 bitter gourd (roughly 500gr), seeded and thinly sliced
500 gr chicken mince
4 cm ginger, minced
2 medium size carrot, peel, slice
400 ml vegetable stock or chicken stock
2 tsp brown sugar
2 tbs light soy sauce
3 tbs oyster sauce
2 tbs mirin sauce
2 tbs kecap manis/sweet soy sauce
1 full tbs black bean garlic sauce
Salt
2 tbs cooking oil
Cooking Instructions:
Place sliced bitter gourd in a bowl, add 1 teaspoon salt and water enough to cover bitter gourd, soak for 15 minutes.
Squeeze gentry the bitter gourd, drain.
Sautee ginger until fragrant.
Add bitter gourd, cook for about 2 minutes, add carrot and cook for further 2 minutes.
Add chicken, stir gently until chicken cooked and no lump.
Add vegetable/chicken stock, brown sugar, light soy sauce, oyster sauce, miring, sweet soy sauce and black bean garlic sauce, cook until the liquid is thicken.
Serve with steamed rice.
