Roast Beef and Winter Salad Recipe

Ingredients:
  • 1,2 roast beef
  • 1 medium white sweet potatoes, chopped
  • ½ japanesse pumpkin or 200gr any pumpkin, cut into pieces
  • 1 beetroot, cut into 4 part
  • 200 gr baby spinach
  • 5 garlic clove, crushed
  • 5 tbs olive oil
  • 1 stalk rosemary, sliced thinly
  • 1 sachet gravy
Cooking Instructions:
  1. Heat the oven 180 degrees celcius, fan forced.
  2. Mix garlic, rosemary and olive oil together.
  3. Place beef into a baking dish.
  4. Using skewer makes 12 little holes around the beef.
  5. Rub the meat with garlic mix.
  6. Cook the beef in the oven for about 40 minutes.
  7. Add all remaining vegies except baby spinach around the beef, bake for another 40 minutes.
  8. Warm up the gravy.
  9. Check if the meat and vegies done, slice the meat to your liking.
  10. Spoon the roast veggies into a bowl, mix gently with baby spinach, taste, all ready to serve.
