Got a few eggs, mushrooms, peanut butter and bean sprouts ? Why don’t you try this recipe? I created this recipe by accident, because I had lots of left over veggies in my fridge. Then I decided to make something out of it (and I don’t like wasting food either 🙂 ).  The taste is similar to a dish from originally from Jakarta “Tahu Telor / tofu egg” but the difference is of course no tofu on this recipe. You can use this peanut sauce for gado-gado recipe too actually.

Mushrooms Omellete With Peanut Sauce Recipe

Ingredients:
  • 4 eggs
  • 150 gr enoki mushroom/any mushroom, cut/sliced
  • 200 gr bean sprout
  • 2 tbs chopped celery leaf
  • 1 tbs fried shallot
Sauce Ingredients:
  • 2 tbs (big scoop) peanut butter
  • ½ tsp sesame oil
  • 1 tbs sweet chilli sauce
  • 1 garlic, crushed
  • 60 ml water
  • 2 tbs sweet soy sauce
Cooking Instructions:
  1. Make the sauce by mixing all sauce ingredients, set aside
  2. Boil the bean sprouts , not over cooking, I like it a bit crunchy
  3. Make 2 golden omelettes out of the eggs mix
  4. Place the omelettes on a plate, add bean sprout, chopped celery leaf and fried shallot on top
  5. Last bit is pour the peanut sauce on top
