Surabaya is famous with it’s Sup Buntut (oxtail soup). It’s a must try dish when you visit this region. Not only as soup, we cook oxtail in BBQ as well as light fried and serve it with very spicy sambal. Delicious 🙂 Little bit of tips, kecap manis goes really well with oxtail too 🙂
Oxtail ala Arie's Kitchen

Ingredients:
- 1 kg oxtail
- Water
- 5 garlic clove, crushed
- 2cm galangal, brushed
- 1 cm ginger, minced
- 1 medium size onion, sliced
- 5 big red chilli, thinly sliced
- 2 bay leaf
- 4 tbs kecap manis
- 2 tbs mirin sauce
- 3 tbs fish sauce
- ½ tsp beef stock powder
- ½ tsp cracked pepper
- 1 tomato, chopped
- 4 tbs cooking oil
Cooking Instructions:
- Boil the oxtail with 1x bay leaf until tender. Drain.
- Brown the tender oxtail until little bit crispy in the outside.
- Heat the oil, sauté onion, garlic, ginger, galangal, 1x bay leaf and chilli until soft.
- Add kecap manis, mirin sauce, fish sauce, beef stock powder and cracked pepper. Stir well.
- Add oxtail, stir well, cook for further 5 minutes.
- Serve with steam rice.
