Potatoes Corned Beef Patties.
When I was little, mum often make this potatoes corned beef patties to complement any soupy dish. Lucky if we have left over as my brother and myself would eat them as soon as mum finished cooking them. Yes, we were little munchies. Potatoes Corned Beef patties

Serves: 20 patties
Ingredients:
- 750gr potatoes, peel, cut, boil until ready to be mashed
- 150 gr can corned beef
- ½ brown onion, minced
- 4 garlic clove, minced
- cooking oil for light frying
- 2-3 eggs, beat in a small bowl
- ½ tsp salt
- ½ cup of plain flour
Cooking Instructions:
- Mash the potatoes.
- Sautee onion and garlic, add into mashed potatoes.
- Add corned beef and salt mix well.
- Create mini patties out of the potatoes mix, set aside.
- Heat the oil in a pan, roll the mini potatoes patties into the four, roll into the egg then light fry them until golden colour.
Notes
This dish can be served as a nibble or side dish. If you serve as a nibble, you can add cut cucumber, slice tomatoes, any salad you like, don’t forget the tomato ketchup or sweet chilli sauce
