This dish goes really well with Butterflied Apricot Chicken. I made this simple recipe on purpose so I can have it with other meat dish without overpowering the taste 🙂

Savoury Risotto Recipe

Serves: 6 - 8
Ingredients:
  • 400gr Arborio rice (risotto)
  • 1.5 cup diced carrot
  • 5 garlic clove, minced
  • 1 big onion, diced
  • 1 litre chicken stock
  • ¼ cup white wine
  • 1 cup grated parmesan cheese
  • 2 tbs cooking oil
  • ½ lemon
Cooking Instructions:
  1. Pre-heat the oven 180 degrees Celsius fan forced.
  2. Sautee onion and garlic until soft.
  3. In an oven-safe lidded casserole, add sautéed carrot onion and garlic, chicken stock, white wine and rice. Mix well. Cover with aluminium foil.
  4. Place in the oven and cook for 45 minutes.
  5. Remove from the oven, while it's hot, add parmesan cheese on top. Drizzle with juice from squeeze lemon.
  6. Serve risotto with Butterflied Apricot Chicken, Osso Bucco, or any other Italian dish.
