CousCous with Sardine Recipe.
Sardines reminds me of one type of fish we used to have when I was little. In my language we call it “ikan pindang”. The only different is that we don’t cook it with tomato sauce. Pindang is just a type of cooking. It’s like pickle and then steam it. And couscous is reminds me of “nasi jagung” or corn dish (we use it as substitute to rice).

Ingredients:
- 1 cup couscous
- 1 cup of water
- ½ tsp of dried oregano leaf
- A pinch of salt
- 1 tbs butter
- olive oil
- 425 gr can sardine in tomato sauce
- 1 tomato, cut into 8 pieces
- 3 garlic clove, thinly sliced
- 1 medium french onion/shallot, thinly sliced
- ½ cm ginger, thinly sliced
Cooking Instructions:
- Place 1 cup of water in a sauce pan, add 2 tbs olive oil and a pinch of salt, bring to boil.
- Remove from the heat, stir and pur 1 cup of couscous.
- Put the lids on and allow to stand for 3 minutes.
- Add 1 tbs butter and oregano, heat again on very low heat for 3 minutes. Remove from heat, set aside.
- Heat oil in a pan, sautee shallot, garlic and ginger until beautifully fragrant.
- Add sardines and tomatoes, put the lids on, cook for about 10 minutes, shake occasionally. Turn off the heat.
- Serve CousCous with sardines on top.
